Detox Day 7 - Wal-not-coffee cake

Today, we had another birthday party! So much fun to see the little ones having a blast, but there are temptations everywhere. Lucky for us, they had delicious mediterranean style food, so I stuck to the meats, veggies and hummus! No cake, thank you. Phew. Weekend crisis averted. I feel like if I can say "no thanks" to birthday cake back to back, I'm good. I did however have a gluten free protein walnut non-coffee baked good...

Vanilla mango shake

Late lunch:
Chicken kabob
Meat kabob

Since we had a very late lunch, and we were kinda full, we decided to just have some detox tea and a slice of this delicious cake craving cure. I'll say YES to this cake any time!


1/2 cup of almond flour
1/2 cup of coconut flour
4 scoops of Arbonne's vanilla protein powder
1 scoop of Arbonne's fiber plus
1/2 teaspoon of baking powder
1 Tbsp of cinnamon
1/2 cup of melted coconut oil
3 eggs
1 cup of almond milk
1/2 cup of agave

For topping
3/4 cup of raw walnuts
1/4 cup of agave
2 teaspoons of cinnamon

Paso a paso

1) In a small bowl, mix all topping ingredients and set aside. Preheat oven to 350.

2) In a large bowl mix all dry ingredients (flours, protein powder, fiber, baking powder, and cinnamon) and set aside.

3) Add melted coconut oil, eggs, almond milk and agave to mixing bowl and turn on mixer on low. Mix well. 

4) Start adding dry ingredients little by little and mix well on high for a couple of minutes.

5) Line loaf pan with parchment paper so bottom doesn't stick while baking.

6) Put cake mixture in loaf pan and top with walnut mixture.

7) Bake at 350 for 40 minutes. With a toothpick, check that center is set. (toothpick should come out clean)

8) The hard part is waiting for it to cool down! Slice it up and enjoy.
