Detox Day 1 - Stuffed bell peppers

You did it! Day 1 is over!


Caramel fit chew
Handful of almonds 
Pomegranate fizz stick

Chocolate shake with unsweetened coconut milk

Sweet potato chips

These stuffed bell peppers were SO good. I love taking recipes that seem challenging or impossible to eat while detoxing, and changing them just a little so my family can enjoy them. This one normally has tons of cheese inside and out, but dairy it's a NO-NO when detoxing. I substituted all that cheese with a very creamy peruvian vegan huancaina sauce (aka "nacho cheese,") and paired it with brown rice and a little fresh salsa on top for a little acidity. This is why I don't feel like I'm missing anything in this new healthier lifestyle. If I crave it, I make it. 


2 bell peppers
1 Tbs of olive oil
1/2 sweet onion (chopped)
1 tablespoon of garlic
1/2 teaspoon of cumin
1/4 teaspoon of cayenne pepper (more if desired)
1 teaspoon of paprika
Salt & Pepper al gusto
1/2 pound of turkey
1 can of beans
1/2 cup of boiled quinoa

Paso a paso

1) Cut off the tops of the bell peppers and take out seeds. Bake bell peppers (standing) for 20 mins at 350.

 2) In a frying pan heat up the olive oil and cook the sweet onions. Add the garlic, cumin, cayenne pepper, paprika, salt and pepper.  Add the ground turkey and cook thoroughly. Time to check on the bell peppers. Let them cool.

3) When turkey is cooked, turn off the stove and add the black beans and the quinoa. Mix well. 

4) Stuff cooled bell peppers with as much filling as you want and serve. Pour "nacho cheese sauce" over it if desired. Eat slowly. 

Late Night Snack:
Remember that you need 12 hours of fasting during this detox, so no eating after 7 if you can. You can however enjoy a nice hot cup of detox tea, like I did.
